First Post - Welcome!

Hello! My name is Katie, and welcome to my new blog. I started this blog so that I can document my explorations in the kitchen and share what I learn with others. I try to cook in the most healthful and flavorful way as possible. I believe if we take time to care for our bodies, our bodies will take care of us. Yes, life is busy, and I'm not perfect (hey I eat frozen dinners in a pinch!), but with a little extra effort and preparation, it's easy to eat healthy.

A little about myself: I am a twenty-something woman and live in Seattle. I work in graphic design and social media communications for non-profits. Even though this is a cooking/healthy living blog, I might have a hard time resisting sharing some beautiful graphic design.

Some personal info that affects my cooking: I, like many women, have Polycystic Ovarian Syndrome (PCOS), a female endocrine disorder that (in my layman terms) affects hormone levels which, in turn, can affect weight, fertility among other symptoms. I've known about my condition since high school when my doctor told me to manage this by diet and exercise. At the time, I didn't think much about it, but now as I'm getting older, I know there is no better time to start taking care of my body than the present. In managing my diet, I don't restrict myself to strict rules or calorie counting, but instead focus on eating nutrient-rich, whole foods. Simple changes (whole grain pasta instead of white pasta, olive oil instead of butter) and nutritional additions (chia seeds, flax seed, nutritional yeast) require minimal effort yet make a huge difference.

Another thing you will notice about my recipes: they are (mostly) gluten-free. My boyfriend recently found out he is gluten-intolerant. Cutting gluten out of his diet has been life-changing for him. As the cook in our house, I have had to learn how to cook and shop gluten-free. With the growing awareness of Celiac's and gluten-intolerance, there are wonderful resources for those with these conditions. I took J's diagnosis not as a restriction to my cooking but as a new venture and challenge.
